Half the national territory is Amazonian, and its peoples belong to a basin-wide food system rather than to an Andean one.
The Pacific coast, the Andean corridor, the Amazon and the Awรก and Pasto peoples all cross the border; so do arepa-adjacent maize breads, sancocho and the coconut kitchen of the Pacific.
A shared Andean and Pacific inheritance, an Inca period in common, and a long argument about ceviche in which neither side is recorded here as right.
