INTO Ecuador: Spanish and, more recently, LEBANESE and Syrian families who became prominent in Guayaquil commerce and politics; Italians; Chinese, whose CHIFA restaurants are in every Ecuadorian town and whose chaulafรกn is now an Ecuadorian dish; Jewish refugees in the 1930s-40s; Colombians and, since 2015, a very large VENEZUELAN arrival which has changed the street food of Quito and Guayaquil. OUT: the 1999-2001 exodus after the bank collapse and dollarisation, above all from Azuay and Caรฑar to SPAIN and to NEW YORK, ITALY and the United States โ€” Ecuadorian restaurants, hornado and llapingachos in Queens and Madrid, and remittances that rebuilt the southern highlands.
