Honduras is mountainous, has the longest Caribbean coast in Central America, and its food divides accordingly. The interior and Pacific: BALEADAS — a thick flour tortilla folded over refried red beans, crumbled quesillo and mantequilla crema, and the national everyday food — plus plato típico, carne asada, chismol, tajadas, and the LENCA highlands of Intibucá, Lempira and La Paz. The CARIBBEAN COAST — La Ceiba, Trujillo, the Bay Islands — is a different country: GARIFUNA communities with hudut, tapado, ereba and machuca; coconut in everything; seafood; the English-speaking BAY ISLANDS with baleada-free Caribbean food; and the MISKITO and TAWAHKA of La Mosquitia in Gracias a Dios. ⚠ AND THE BANANA COAST: Tela, La Ceiba and Puerto Cortés were built by United Fruit and Standard Fruit, which is where the term "banana republic" comes from and is a food-system fact before it is a political insult.
