⚠ A METHOD NAMED AS A DISH. Breadfruit, salted meat (pig tail, salt beef), chicken, callaloo, dasheen, green banana, dumplings, carrot and celery, all layered in a big pot with COCONUT MILK and TURMERIC and cooked until the coconut milk is entirely absorbed and the oil separates out at the bottom — "oiled down". Cooked outdoors over wood, in quantity, for a crowd: a beach lime, a fête, a cooperative workday. ⚠ EVERY HOUSEHOLD’S DIFFERS and no ingredient list is recorded as definitive; breadfruit, coconut milk, turmeric and salt meat are the constants. Related to Vincentian and Trinidadian oil down and to Tobago’s, and recorded as a Grenadian national dish within a shared Windward practice.
