⚠ AN ARCHIPELAGO, NOT AN ISLAND, and the food follows the water. Around 700 islands and cays across a very large area of shallow bank, with about 30 inhabited and most people on NEW PROVIDENCE. The food is overwhelmingly MARINE: CONCH above all — in salad, cracked, fried in fritters, in chowder, scorched — plus spiny lobster (crawfish), grouper, snapper, land crab and the stone crab. Beside it: PEAS AND RICE with pigeon peas and salt pork, SOUSE eaten at breakfast, boil fish, johnnycake, guava duff, and SWITCHA. ⚠ THE SOIL IS THIN LIMESTONE and much food is imported — a structural fact behind the whole cuisine, not a modern failing.
