Black beans, cooked with onion, garlic, pepper and cumin, and — characteristically — finished SWEET, with a little papelón or sugar, which distinguishes Venezuelan caraotas from Cuban or Brazilian black beans. One quarter of pabellón; the filling of the arepa dominó; eaten with rice, with nata, with queso rallado. ⚠ THE SWEETENING IS THE MARKER and is regionally variable — not every household does it, and some argue about it.
