Herring is the historical foundation of Danish coastal wealth โ the medieval Scania Market, run from the Danish side of the รresund, was one of the largest fairs in Europe and was built on salted herring. Modern forms: salted and matured; marineret in vinegar and onion; karrysild in a curry cream; tomatsild; kryddersild; stegte sild i eddike; and the smoked herring of Bornholm. It opens every julefrokost and every Easter lunch, and the order is not negotiable.
