Monegasque Foodways

Cรผjina munegasca

National

The food of Monaco: a LIGURIAN coastal kitchen, not a French or Italian one, however much of both surrounds it. Chickpea and chard, olive oil, anchovy and sardine, herbs off the dry hillside, stuffed and fried things, citrus and almond โ€” the cooking of a rock between the sea and the Alps, with almost no farmland and a fishing port at its centre. โš  AND IT IS NOT THE MONTE-CARLO RESTAURANT SCENE, which is a separate and much more recent thing.
