The island and coastal societies of the northern Atlantic taken together โ€” Iceland, the Faroes, Greenland, Shetland, Orkney, the Hebrides, coastal Norway and Atlantic Canada: sheep where sheep will live, sea fish above all, seabirds and sea mammals where law and tradition allow, almost no grain, wind and cold as the preserving agents, and a dependence on trade for everything that will not grow. โš  A COMPARISON LAYER, NOT A CUISINE: these are separate peoples with separate kitchens that faced the same problem.

  • Iceland, the Faroe Islands and Greenland are Nordic but are not Scandinavian in the geographic sense, and none of the three is modelled as a branch of Danish foodways despite the political relationship within the Kingdom of Denmark.
