⚠ HONDURAS’S PACIFIC SHORE IS ABOUT 160 KM LONG AND IS A WHOLE SEPARATE FOOD SYSTEM. Choluteca and Valle, on a gulf shared with EL SALVADOR and NICARAGUA — one estuary, three countries, and a maritime boundary that was settled by the International Court of Justice in 1992 as a zone of joint sovereignty. The foodway: MANGROVE estuary, CURILES (black ark clams) gathered by hand in the mud, mostly by women; CONCHAS, punches (mangrove crab), shrimp, snook, corvina, sierra; CEVICHE and sopa marinera; SALT produced by solar evaporation on the flats; melon, sugarcane, cashew and sesame on the coastal plain. ⚠ INDUSTRIAL SHRIMP FARMING transformed this coast from the 1980s and its conversion of mangrove is a documented conflict with the artisanal gatherers who depend on the mangrove standing.
