Almost nothing arable grows: potatoes, turnip, rhubarb and a little barley historically, in walled gardens and the infield. Potatoes arrived in the 18th century and became the necessary companion to rรฆst meat and fish. Dairy from a small cattle population, with imported flour, sugar and coffee filling everything else โ€” which is why the Faroese kitchen is a preserved protein plus a potato plus an import.
