Concentrated in Iowa, Nebraska, Minnesota, Wisconsin, Illinois and California, and sustained through Lutheran churches, folk schools and community festivals. Æbleskiver above all — the pan is the heirloom — with kringle, which became a Racine, Wisconsin institution in an oval filled form quite unlike the Danish one; medisterpølse; rullepølse; frikadeller; and Christmas rice pudding with the almond. Solvang in California and Elk Horn in Iowa are the most visible community centres. ⚠ NOT EVERY SCANDINAVIAN-AMERICAN DISH IS DANISH — lutefisk and lefse are Norwegian and Swedish markers, not Danish ones.
