The Andes split into THREE CORDILLERAS in southern Colombia, and the valleys between them held separate societies and separate kitchens. This is where most Colombians live: Antioquia, the Eje Cafetero (Caldas, Quindío, Risaralda), Cundinamarca and Bogotá, Boyacá, Santander and Norte de Santander, Tolima, Huila, and the Andean parts of Cauca, Nariño and Valle. MAIZE and the arepa; POTATO in many native varieties; beans; PORK in every form; dairy and fresh cheese; wheat since the colony; PANELA; COFFEE; and the soup — ajiaco, sancocho, mute, caldo, changua — that opens the day. ⚠ ANTIOQUIA, BOYACÁ, SANTANDER AND NARIÑO ARE FOUR DIFFERENT KITCHENS and are recorded as such.
