⚠ THE MOST ELABORATE THING VENEZUELA COOKS, AND IT IS MADE ONCE A YEAR. Maize dough coloured with onoto (annatto), spread on a PLANTAIN LEAF, filled with a GUISO of beef, pork and chicken stewed a day ahead, then adorned — the adornos are laid on by hand: olive, caper, raisin, almond, onion ring, red pepper strip. Tied with string and boiled. Made in a FAMILY ASSEMBLY LINE in the days before Christmas, one person to a job, in batches of a hundred, and distributed to relatives and neighbours. ⚠ REGIONAL VARIANTS ARE REAL AND ARGUED OVER: the central/Caracas hallaca; the ANDEAN, smaller, often with more pork and sometimes garbanzo; the ZULIANA, larger, sometimes with a plantain-dough element; the ORIENTAL, which may include fish or sardine on the coast; the LLANERA, simpler and beef-heavy; and the GUAYANESA. ⚠ NOT A TAMAL. The leaf, the guiso, the adornos and the calendar are all different, and no single ingredient list is recorded as definitive.
