The system that made Norwegian dairying possible: livestock driven to mountain pasture for the summer while the home fields grew winter fodder, and milk turned on the spot into butter, cheese, whey cheese and sour cream because it could not be carried down fresh. Usually the womenโs domain. Tens of thousands of seters were in use into the 20th century; a few hundred still work, and they are the source of most Norwegian artisan cheese.
