Dairy above all โ€” Carmarthenshire and Ceredigion are the heart of Welsh milk, butter and farmhouse cheese, and CAERPHILLY was largely made here rather than in Caerphilly by the twentieth century; PEMBROKESHIRE EARLY POTATOES, protected and dug in May from the coastal fields; sea trout and salmon on the Teifi, historically netted from coracles; and Carmarthen ham, air-dried and salt-cured.
