Potatoes on the sandy geest and the reclaimed bog, and Fryslân as a world centre of SEED POTATO breeding and export — a large modern agricultural speciality. In the kitchen: stamppot of potato mashed with kale, carrot or sauerkraut; potato with bacon and buttermilk; and the plain boiled potato with a piece of cured meat that was the working meal. ⚠ THE POTATO IS AMERICAN and became the staple here in the 18th and 19th centuries.
