STILTON, blue, protected, and legally unmakeable in Stilton itself. WENSLEYDALE, LANCASHIRE, CHESHIRE — possibly the oldest named English cheese — Red Leicester, Double and Single Gloucester, Sage Derby, Caerphilly (⚠ Welsh in origin, much made in England). Plus a farmhouse revival since the 1980s: Stichelton, Kirkham’s, Montgomery’s, Tunworth.
