The temperate inter-Andean valleys — COCHABAMBA above all, plus Sucre, Tarija and the Chuquisaca valleys: maize in quantity and the CHICHA brewed from it, wheat, potatoes, peanuts, ají, stone fruit and grapes. Cochabamba is the country’s acknowledged eating city, with SILPANCHO, PIQUE MACHO, chicharrón and the chicherías; TARIJA has the vineyards and the SINGANI.
