Argentina is among the largest wine producers in the world and its vineyards are among the HIGHEST — Cafayate in Salta above 1,700 m and Uco Valley plantings higher still, where intense sun, wide diurnal range and near-zero rainfall give a viticulture dependent entirely on Andean snowmelt irrigation through canals that are Huarpe and colonial in origin. MENDOZA is roughly three quarters of it, with San Juan, La Rioja, Salta, Catamarca, Neuquén and Río Negro. ⚠ NOT ONLY MALBEC: Bonarda is the second most planted red, and TORRONTÉS — genuinely Argentine, a cross of Muscat of Alexandria and Criolla Chica — is the signature white.
