Stuffed Pepper Casserole
Stuffed Pepper Casserole is a delicious ground beef, sausage, rice and pepper mixture that is a skillet dinner. This is a one pot dinner that is easy to make and a no fuss dinner.

Ingredients
- 1/2 lb Ground beef
- 1/2 lb mild sausage
- 1 large bell pepper diced
- 1 small onion diced
- 3 clove garlic
- 1/2 tsp salt
- 1/4 tsp ground pepper
- 1/2 tsp ground oregano
- 14 oz tomato diced undrained
- 2 cup beef broth
- 8 oz tomato sauce
- 1 tbsp soy sauce
- 1 cup uncooked white rice
- 1 1/2 cup cheddar cheese shredded
Method

In a large skillet with tall sides, or a large pot, brown the beef, sausage, and onion. Drain the grease and add in peppers, salt, pepper, and oregano. Stir well to combine.

Add the garlic cloves and sautรฉ until fragrant.

Add diced tomatoes, beef broth, tomato sauce, soy sauce, and uncooked rice. Bring to a boil over medium-high heat, reduce the heat to low and allow to simmer for 20-25 minutes or until the rice has cooked through.

Sprinkle the cheese over top and allow to melt. Serve immediately.

Keep any leftovers in an airtight container in the refrigerator for up to three days.
