Ingredients
- 4 boneless center-cut pork chops 1-inch thick
- Olive oil for frying
- 1 cup caramelized onions
- 1 cup beef stock
- 4 tsp whole-grain dijon mustard
- 4 slice provolone cheese
- 1/4 tsp dried thyme
- 1/2 tsp salt optional
- 1/4 tsp pepper
Method

Preheat oven to 350 degrees.

In an oven proof skillet, heat oil over medium high heat.

Season porkchops.

Sear the chops on both sides in the skillet. Remove from the pan and set aside.

In the skillet, add the stock and thyme.

Add the caramelized onions and simmer for 3-5 minutes for all the flavors to melt together well.

Meanwhile, spread each pork chop with 1 tsp of mustard on top and then place the meat into the onion sauce.

Place the skillet into the oven for 20 โ 25 minutes until the pork chops read 160 Fahrenheit.

Remove the frying pan from the oven and carefully add the cheese to the top of each pork chop.

The skillet goes back into the oven for about 5 minutes until the cheese melts and lightly browns.
