From Gaelic UISGE-BEATHA, water of life, with the first documentary record in the Exchequer Rolls of 1494. โš  SCOTCH IS DEFINED IN LAW, not by custom: the Scotch Whisky Regulations require distillation in Scotland from water, malted barley and other cereals, maturation in oak casks in Scotland for at least THREE YEARS, a minimum of 40% abv, and no additive but water and caramel colouring. Categories: single malt, single grain, blended malt, blended grain and blended. โš  THE "REGIONS" ARE LEGALLY DEFINED BUT ARE NOT RELIABLE FLAVOUR PREDICTORS: Highland, Lowland, Speyside, Islay and Campbeltown are protected localities, and peated whisky is made well outside Islay. Peat, water and cask do the work.
