Rationing and Wartime Foodways

Historical period

Occupation from April 1940 to May 1945, with rationing, substitute coffee, and an agricultural economy turned to supplying Germany; and the October 1943 rescue of Danish Jews across the Øresund. Rationing continued into the early 1950s. The frugal dishes of the period — and the taste for them — persisted well beyond it.
