The most populous province and the most plural food city in the country. Southern Ontario is serious farmland: the Niagara peninsula and Prince Edward County for WINE and ICEWINE — ⚠ Canada is the largest producer of icewine in the world, made from grapes frozen on the vine and picked at night — plus the Holland Marsh, the tender-fruit belt, corn, soy and dairy. Foods: BUTTER TARTS, whose raisin-or-no-raisin and runny-or-firm arguments are a genuine provincial sport; peameal bacon and the back-bacon sandwich at St Lawrence Market; the Ontario cheddar tradition. NORTHERN ONTARIO is different country entirely: boreal, with Anishinaabe and Cree communities, WILD RICE, blueberries, moose and lake fish, and the Sudbury and Thunder Bay Finnish and Italian mining communities with their own food — including the Thunder Bay Finnish pancake houses.
