The high plain: thin air, hard frost, and a food system engineered around both. POTATOES in great diversity and the freeze-drying that answers the frost — CHUÑO (black, trodden and sun-dried) and TUNTA (white, washed under running water and frozen), which keep for years and are the reason highland settlement is possible at all. QUINOA, especially quinoa real around the salares; cañihua; LLAMA and ALPACA, with charque; sheep; and Lake Titicaca with its fish. LA PAZ, El Alto, Oruro and Potosí.
