Black-eyed pea fritters, the peas peeled, ground and beaten, then deep fried in DENDÊ palm oil and split to hold vatapá, caruru, dried shrimp and pepper. Directly cognate with West African akara, and Yoruba in origin. Sold in Salvador by the BAIANAS DE ACARAJÉ in white lace and beads — a trade with a documented line from enslaved and freed women selling food to buy their own freedom, now recognised as Brazilian intangible cultural heritage since 2005 and regulated as such.
