  1. In a large deep skillet or sautรฉ pan, heat olive oil over medium heat. Add diced red onion and ground beef. Cook, breaking up the beef, until browned and the onions are softened, about 6โ€“8 minutes.

  2. Drain excess grease from the pan if necessary.

  3. Add taco seasoning, diced tomatoes (with juice), dry spaghetti, and water directly into the skillet.

  4. Stir everything together and bring to a boil over medium-high heat.

  5. Reduce heat to low, cover, and simmer for 12โ€“15 minutes, stirring occasionally, until pasta is tender and most of the liquid is absorbed.

  6. Remove from heat and stir in the shredded cheddar cheese until melted and fully combined.

  7. Serve hot, garnished with chopped fresh cilantro or extra tomatoes if desired.
