Swiss Lake and River Foodways

Coastal

Fish from the lakes and rivers: perch and féra from Lake Geneva, whitefish from Constance and Neuchâtel, Rötel from the Zugersee, char from the deep Alpine lakes, pike, trout and grayling from the Aare, the Rhine and the Rhône. Season, species and fishing right differ lake by lake.

Atlas — where and when

What is recorded

  • Wild mushrooms gathered in Swiss forests include deadly species, and most cantons run free inspection services (Pilzkontrolle) for exactly that reason. No folk test distinguishes a deadly Amanita from an edible species and cooking does not destroy amatoxins; identification belongs to an inspector. documented
