โš  A DATING ROW. Maize, potatoes, beans of the Phaseolus kind, tomatoes, peppers, pumpkins and squash are all American and none of them is an ancient Carpathian food. Maize and beans spread through the Hungarian and Ottoman lands from the 16th and 17th centuries; potatoes only became a staple here in the late 18th and 19th; paprika as a seasoning is a 19th century development. Dishes built on them are recent, however traditional they now feel.
