Quilombola Foodways

Community

QUILOMBOS were communities formed by people who escaped enslavement — Palmares in Alagoas held out for most of the 17th century — and their descendants, QUILOMBOLAS, are a constitutionally recognised category with land rights under the 1988 constitution. Thousands of communities are certified, from Kalunga in Goiás to the Ribeira valley in São Paulo and the Amazon várzea. Their foodways are living: swidden agriculture, cassava and its flours, rice, beans, fishing, extractivism, and a food-sovereignty politics tied directly to land tenure. ⚠ RECORDED AS A CONTEMPORARY COMMUNITY SYSTEM, with locations kept general.
