Imperial
An imperial food system, not a national one: palace kitchens and their registers, provincial and military food, caravan and market food, mosque and waqf kitchens, coffeehouses, and the sweets, breads, rice and vegetable dishes that travelled the whole empire. Its inheritors include the Balkans, the Levant, Egypt, North Africa and the Caucasus as much as Turkey.
Damascus and Aleppo were Ottoman cities of the first rank for four centuries, and the urban kitchen is elaborated within that world.
