⚠ A BOUNDARY ROW. Norway has the largest Sámi population of any state and recognises the Sámi as an Indigenous people with their own parliament. Sámi foodways — reindeer, wild salmon on the Tana and Alta, freshwater fish, coastal Sea Sámi fishing, berries, game, bidos, suovas, gurpi, dried meat — are a ROOT system here. What is recorded is CONTACT: reindeer meat in the Norwegian kitchen, shared markets, and shared Arctic ingredients. The history also includes FORNORSKING, the state Norwegianisation policy against Sámi language and culture into the twentieth century, and continuing disputes over land, water and reindeer pasture. None of that is omitted to make a food page comfortable.
