The Destruction of Bessarabian Jewish Food Life

Historical period

From 1941 the Jewish population of Bessarabia and northern Bukovina was deported to Transnistria and murdered, following the Chişinău ghetto and the pogroms of 1903 and 1905 that had already driven mass emigration. An entire layer of the region’s trade — milling, grain and wine dealing, innkeeping, kosher butchery — as well as a cuisine, was destroyed. Recorded here as history, not as a footnote to a menu.
