The concentrations: NEW YORK, above all Richmond Hill in Queens, which is effectively an Indo-Caribbean city quarter with its own roti shops, doubles, and West Indian groceries; TORONTO; LONDON; and Trinidad, Barbados, Suriname and Venezuela regionally. The food travelled intact and then changed: roti shops, pepperpot at Christmas in Brooklyn and Scarborough, black cake posted between countries, and a Caribbean grocery trade that supplies cassareep and green seasoning to three continents.
