⚠ NOT PERUVIAN CEVICHE AND NOT A LESSER VERSION OF IT. Ecuadorian ceviche is SOUPIER: the leche de tigre is a liquid you drink, tomato is usual, the onion is cured, and CEVICHE DE CAMARÓN — shrimp, often briefly cooked rather than raw, in a tomato-and-citrus broth — is the national form, not the fish one. Served with CHIFLES, canguil (popcorn) and tostado, which Peru does not do. Also ceviche de concha (black ark clams from the mangrove), de pescado, de pulpo, and the Manabí variants. ⚠ THE PERUVIAN AND ECUADORIAN TRADITIONS ARE RELATED AND SEPARATE; this system records neither as the original.
