Amazonas, Caquetá, Guainía, Guaviare, Putumayo and Vaupés — around a third of the national territory, a very small share of the population, and the greatest linguistic diversity in Colombia. BITTER YUCA, processed by grating, pressing in a tipiti or matafrío and roasting, into CASABE and FARIÑA/mañoco, which store for months in a climate where nothing else does. River fish — pirarucú, gamitana, bocachico, the enormous catfish of the main channel. Plantain. Palm fruits: canangucho/moriche, asaí, milpesos, chontaduro. Forest fruits: copoazú, arazá, camu camu, cocona, umarí. And the ANT and larva foods eaten in season. ⚠ NOT ONE CUISINE: dozens of peoples in several unrelated language families live here.
