An archipelago with its own identity, its own wooden churches on the UNESCO list and its own mythology. POTATOES above all — Chiloé is a centre of potato origin and holds hundreds of native varieties; CURANTO, cooked in a pit on hot stones under nalca leaves with shellfish, fish, pork, chicken, potatoes, MILCAO and CHAPALELE; seaweed — luche, cochayuyo; the apple chicha and the minga work-party; and a Mapuche-Huilliche and Spanish population that was the last royalist stronghold in South America.
