Manitoba, Saskatchewan and Alberta: WHEAT on a scale that fed empires, plus canola (bred in Canada and named for it), pulses — ⚠ SASKATCHEWAN IS AMONG THE WORLD’S LARGEST LENTIL AND PEA EXPORTERS, which surprises people — beef and the Alberta feedlot, bison returning as ranched animals, and the saskatoon berry. The settler food is Eastern European before it is British: UKRAINIAN above all, with PEROGIES (varenyky), holubtsi, kielbasa, borscht and the world’s largest perogy statue at Glendon; plus Mennonite communities with vereniki, farmer sausage and rollkuchen; Hutterite colonies; Icelandic Gimli with its vínarterta; and German, Polish and Scandinavian settlement. ⚠ ALL OF IT ON TREATY LAND whose Indigenous food system was destroyed with the buffalo.
