COD above all — salt cod built the whole European presence here, and ⚠ THE 1992 MORATORIUM after the northern cod stock collapsed put around 30,000 people out of work in one announcement, the largest industrial layoff in Canadian history, and the stock has still not recovered. Beyond cod: LOBSTER, which was poor people’s food and servants’ food into the nineteenth century before it became luxury; scallops, snow crab, mussels; PEI POTATOES; dulse from the Bay of Fundy; blueberries; and the Annapolis valley apples. Newfoundland has its own kitchen entirely: JIGGS’ DINNER (salt beef with root vegetables and pease pudding), fish and brewis with scrunchions, toutons, figgy duff, cod tongues and cheeks, moose, bakeapples (cloudberries), and Purity syrup and hard bread.
