A thick stew of white maize, beans, squash and meat — beef, pork, chorizo, tripe — with a fried ají-and-paprika fat spooned over. ⚠ ANDEAN AND PRE-COLUMBIAN IN ORIGIN, from Quechua ruqru, and shared with Bolivia, Peru, Chile, Ecuador and Paraguay; the pork and beef are colonial additions to an Indigenous maize-and-squash base. In Argentina it is eaten nationally on 25 May and 9 July, which turned a regional Andean dish into a patriotic one — a documented 20th-century development.
