A flat maize griddle cake, cooked on an iron plate and folded round txistorra or cheese at fairs and festivals. โ MAIZE REACHES THE BASQUE COUNTRY IN THE SEVENTEENTH CENTURY and then becomes the bread of the poor, replacing millet and chestnut. Talo is emphatically NOT an ancient pre-Columbian food, whatever its rustic appearance suggests.
