The pig above all, killed at home in late autumn and turned into a year’s supply in a few days; sheep and goat where there is pasture; poultry and goose in the lowland; beef rarely, because the cow was worth more alive; rabbit and game from the forest. Meat was a festival and a winter food, not a daily one, and the fast calendar removed it for a large part of the year.
