SUAASAT, the soup of seal, whale, reindeer or seabird with onion, potato and rice or barley thickened with the broth, is the national dish. KIVIAQ โ auks fermented whole inside a sealskin under stone for months โ is a north-western speciality and is recorded with its full safety caveat. Dried fish and meat with blubber; frozen raw quaq; ammassat; mattak; and the KAFFEMIK, the open-house coffee table with cakes, bread and often kalaalimernit that marks every birthday, confirmation and occasion โ which is, socially, the most important Greenlandic food institution of all.
