The heart of the whole system. Reclaimed marsh clay grows grass better than anything else, so Frisia became dairy country and stayed it: milk, butter, buttermilk โ€” drunk, and made into brea mei sรปpe โ€” cream, and cheese in quantity. Butter and cheese were exported through Harlingen and the Zuiderzee ports for centuries, and the Leeuwarden butter exchange set prices for a wide area.
