CRACKED CONCH — pounded, battered and fried. CONCH FRITTERS. CONCH CHOWDER, tomato-based. SCORCHED CONCH, scored and dressed raw. STEW CONCH. ⚠ THE FISHERY IS IN DOCUMENTED DECLINE across the region: queen conch is listed on CITES Appendix II, stocks have collapsed in several neighbouring jurisdictions, and Bahamian scientific assessments have warned of commercial extinction within decades without management. ⚠ THAT IS RECORDED AS PART OF THE FOODWAY, because a food this central has a future as well as a past.
