Between 1880 and 1930 Argentina took in around six million immigrants against a population that was tiny to begin with, and roughly half were ITALIAN — which is why perhaps sixty per cent of Argentines have Italian ancestry and why the food is what it is. MILANESA, ubiquitous, and milanesa napolitana — ⚠ invented in BUENOS AIRES, at a restaurant called Nápoli, and Neapolitan in name only. PIZZA in a dense Buenos Aires style with a thick crust and a great deal of cheese, plus FUGAZZETA with onion. Ñoquis on the 29th of the month with money under the plate.
