⚠ TWO DIFFERENT THINGS UNDER ONE WORD. WILD ATLANTIC SALMON running up the Tana, Alta, Namsen, Gaula and Numedalslågen is an old food and an old right, netted and rod-caught, now much reduced and tightly regulated, and central to river and Sámi communities. FARMED SALMON is an industry begun in the late 1960s in the fjords, now Norway’s largest food export by far, with documented controversies about sea lice, escapees and pressure on wild stocks. Gravlaks and røkelaks belong to the first tradition and are now mostly made from the second.
