SHEEP above all, because most Norwegian land will graze and not plough; goats, especially in the west; cattle more for milk than beef; pork; and game — moose, red deer, roe deer, reindeer, grouse and ptarmigan — taken in substantial numbers every autumn. Fårikål, mutton and cabbage boiled with whole peppercorns, was voted the national dish and has its own day in September.
