Mushrooms in the beech woods โ€” ceps, chanterelles and the rest; wild garlic; nettles, sorrel, ground elder and other spring greens; beach plants on the salt marsh โ€” sea kale, samphire, sea buckthorn; elderflower; rose hips; hazelnuts; and seaweed on both coasts. Foraging was an ordinary household activity, then largely lapsed, and was deliberately revived from the 2000s as part of New Nordic practice. โš  NOT AN IDENTIFICATION GUIDE: several Danish fungi are lethal.
